I had seen similar mushroom pizza on Pinterest and always wanted to try it but they always used portobello mushrooms and I don't have access to those here in Japan. I do, however, have access to shiitake and I found some suitably large ones so I thought it was time to give it a go.
I haven't had pizza since I started keto 3months ago and I've been eating mostly the same fish and chicken so it was nice to have something new.
My toppings:
-olive oil (both on and under)
-shiitake mushrooms
-one tomato (instead of sauce which is, of course, chemically manufactured and full of carbs)
-garlic (mine is a garlic and chili mix)
-avocado (essential to get some more calories in my day)
-salt and pepper
-mozarella
Then all I did was prepare my makeshift stovetop oven (see my garlic bread post) and leave it to bake away for 10mins or so et voila!
Super simple. Super yum. Super keto.
